Seven Caves Spirits was founded in San Diego by Geoff Longenecker, who named the distillery after La Jolla's sea caves. The brand blends Longenecker's Louisiana culinary upbringing with San Diego's coastal and agricultural bounty, sourcing ingredients from local farmers markets and collaborating with other small San Diego producers. Seven Caves describes itself as 'San Diego's ludicrously small batch distillery,' releasing year-round staples alongside constantly rotating seasonal and Exploratory Series one-offs, many of which sell out and never return.

How It's Made
Every Seven Caves spirit is made in-house, from grain to glass, at their San Diego distillery. Releases range from year-round core expressions to seasonal one-offs and an ongoing Exploratory Series built around collaborations with local partners, such as barrel-aged gin finished in mead barrels from Lost Cause Meadery and a rum blended with jasmine tea from Paru Tea Bar.
Tasting Notes
Juniper dominates the nose at first, but a dash of tonic or a cube of ice brings out the fuller intent of the spirit.
