Blinking Owl Distillery

The Blinking Owl is the first craft distillery in Orange County and one of the first in California to hold a Type 74 Craft Distillers License, allowing it to operate a tasting room and sell bottles on site. It makes vodka, gin, several types of whiskey, and aquavit. Longtime Santa Ana residents Brian and Robin Christenson founded the distillery paying homage to the midcentury "Blinking Owl Bar" that once stood on the corner of Birch and Third Streets in Santa Ana, known for an owl sign that would blink, inspired by the craft cocktail and farm-to-table movements.

Charbay

Charbay was founded in 1983 in Ukiah, California as Domaine Karakash, becoming the 177th licensed distillery in America. The Karakasevic family traces its distilling heritage back 13 generations to 1751, when the House of Karakasevic was honored by the Austrian-Hungarian imperial court of Empress Maria Theresa for its wines and brandies. In 1987 the winery was renamed Charbay, a name combining Chardonnay and Brandy after the family's first Dessert Chardonnay. Still independent and family-owned, Charbay is committed to old-world European distilling knowledge paired with American creativity, producing whiskey, vodka, brandy, rum, and liqueurs without cutting corners on time.

Cutler's Artisan Spirits

Dead of Night Distillery

Dead of Night Distillery works out of a small production space on the southern edge of Los Angeles's Arts District, with DSP-CA-20185 printed on every bottle as the only credential they lean on. The lineup reads less like a typical craft distillery's and more like a bar's back shelf: two gins built from entirely different botanical stacks, a prickly pear amaro, an English-style sloe gin, a caraway-forward aquavit, an absinthe verte. "Make one thing well" was never really the goal here. Everything is hand-run in small batches, and the produce comes from the farmers markets a few blocks over, often the same day it's picked.

Greenbar Distillery

Greenbar Distillery began as a couple's home hobby of infusing spirits with fresh, real ingredients, started by Melkon Khosrovian and Litty Mathew in Monrovia, California in 2004. In 2008 they noticed a batch made with produce from a newly organic-certified grower tasted noticeably better, which led them to work with researchers at UC Davis and discover that organically grown ingredients produce more aromatic, flavorful spirits. That discovery led them to convert entirely to organic ingredients and launch the Greenbar Distillery name. In 2010 they moved into a 1905 bow truss building in what is now the LA Arts District, becoming the first distillery in Los Angeles since Prohibition. Greenbar now makes the largest portfolio of organic spirits in the world, spanning TRU Vodkas, CRUSOE Rums, IXA Tequilas, SLOW HAND Whiskeys, FRUITLAB Liqueurs, CITY Gins, GRAND POPPY and GRAND HOPS Amari, and BAR KEEP Bitters. Through its One Bottle, One Tree program with Sustainable Harvest International, Greenbar has planted more than a million trees since 2008 and describes its spirits as carbon negative.

Hanson of Sonoma

Hanson of Sonoma began as an idea from brothers Chris and Brandon Hanson, who spent two years and 155 experimental batches developing an organic, grape-based vodka before settling on their final blend in 2013. That same year they presented bottles with masking-tape labels at the Spirits International Prestige Awards and won Best in Class for Vodka and the Platinum Award, plus two golds at the Vodka Masters in London. The family opened its Sonoma tasting room in 2018 and a second tasting room in Sausalito in 2019. Hanson of Sonoma sits in the Carneros Appellation on the border of Sonoma and Napa counties.

Hollywood Distillery

Founded in 2016 by three longtime Hollywood residents who kept wondering why their neighborhood - famous for its cocktail culture - still had no distillery of its own. California Assembly Bill 1246 finally opened a regulatory path for craft distillers, nearly a century after Prohibition closed it. Hollywood Distillery now operates out of a converted 1920s Pierce Brothers Mortuary on Santa Monica Blvd, across from Hollywood Forever Cemetery - the first working distillery in Hollywood in almost 100 years.

Old 49

Old 49's recipe traces back to Nat Kidder, a 34-year-old electrical contractor who began distilling vodka aboard Navy battleships for sailors in 1940. He spent years refining a whiskey recipe too, marking each bottle with a Navy stencil. On December 5, 1941, Kidder and his pregnant wife sailed for California, narrowly avoiding the attack on Pearl Harbor two days later. He finalized his whiskey recipe in 1949, and Old 49 takes its name from that year. The modern company launched out of a Los Angeles garage in 2016, and Old 49 California Whiskey and Nat Kidder Navy Strength Vodka are now sold at over 300 locations across Southern California and the West Coast.

Rosalie Bay Distillery

Rosalie Bay, Dominica

Rosalie Bay Distillery calls itself the world's only conservation distillery. Based in Rosalie Bay on the east coast of Dominica, it is run as a non-profit, and 100% of revenue goes back into ocean conservation work on the island, including sea turtle protection, coral reef restoration, and whale research. Every bottle is traceable from the sugar cane farms that supply it through to the conservation funding it generates. Production is intentionally small, a few thousand bottles a year, and the distillery itself is carbon-negative: bagasse left over from pressing cane is composted into fertilizer and experimental biochar, and wastewater from distillation is treated on-site and reused as irrigation water for local farms. All of the sugar cane is grown within an hour of the distillery, and the team is entirely local to Dominica.

Rum et al. is an experimental rum project from et aliae spirits, LLC - self-described "experimental rum makers who love the art and science behind the various techniques used to create rum." The company is built around transparency: every batch documents and shares its own fermentation and distillation details on the bottle and website. The name "et al." nods to the Latin "et aliae" ("and others," feminine plural), a phrase common in scientific literature - chosen both as a nod to founder Robyn Smith's science background and to honor everyone who paved the way before her.

Rather than blending a house style from scratch, Spinnaker hunts down single casks from legendary Caribbean distilleries, bottles them additive-free and at full proof, and puts the real distillery of origin front and center on the label instead of hiding behind a made-up brand name.
