Spirit Works Distilling
Our Story
Spirit Works Distilling is a grain-to-glass craft distillery in Sebastopol, in Sonoma County's West County wine country. Founded in 2012 by husband-and-wife team Timo and Ashby Marshall, the distillery mills, mashes, ferments, distills, and bottles every spirit on site from organic California grain. In July 2020 the American Distilling Institute named Spirit Works its National Distillery of the Year, citing not just the quality of the spirits but the distillery's women-led, family-run, community-focused values.
The Founders
Timo and Ashby Marshall met while working together on environmental research vessels, where Timo learned of Ashby's family's generations-old sloe gin recipe. Both came from backgrounds in environmental justice and brought that same philosophy to Spirit Works, building the distillery around the idea that its decisions should give back to the land and the community as much as they take from it.
How We Make It
Every Spirit Works spirit starts as organic California grain, milled and mashed on site, then fermented, pot distilled, and bottled at the Sebastopol distillery. The whiskeys are aged a minimum of four years in full-size American oak barrels. The vodka, gin, and sloe gin are all built from the same base of organic red winter wheat.

Ashby Marshall

A West Coast native who spent years as an environmental campaigner and crew member on research vessels before becoming Spirit Works' Head Distiller. She has spent over a decade refining the distillery's grain-to-glass process and mentoring women in the spirits industry.
