The needles and bark are collected by a licensed arborist from trees on private and municipal land during routine care, never from protected reserves. Owner Matt "Woody" Kidd first got the idea for Torrey Pines Gin on a family hike in France, when his son asked if he could make a gin from Torrey Pine needles.
How It's Made
Spirits are distilled in small batches in San Diego. The Straight Bourbon and Straight Rye whiskeys are each aged a minimum of five years in American oak barrels, with the rye finished further in Cabernet barrels sourced from a sister winery. Torrey Pines Gin's pine needles and bark are harvested by a licensed arborist from trees on private and municipal land during routine care, never from protected reserves.
Tasting Notes
Nose: bright and inviting, with prominent pine and juniper layered with subtle citrus and floral notes. Palate: refreshing and lightly herbaceous with a smooth, lingering quality. Finish: crisp and clean with warmth and a final echo of pine.
