What is an aquavit?

Aquavit is a Scandinavian spirit flavored mainly with caraway or dill. The name comes from the Latin "aqua vitae," meaning "water of life," and it has been made in Norway, Sweden and Denmark for centuries. Think of it as a cousin of gin: both start as a neutral spirit infused or redistilled with botanicals, but where gin is built around juniper, aquavit is built around caraway and dill, often with fennel, anise, coriander or citrus peel alongside.

Each country has its own take:
Norway: often aged in oak, giving it a golden color and warmer, spicier notes
Denmark: usually clear and unaged, crisp and clean
Sweden: somewhere in between, often with a touch of sweetness

Aquavit is traditionally served chilled in small glasses alongside food, especially seafood, pickled herring and holiday spreads, and a round usually starts with a toast of "skål."
